Creativity is all you really need
When it’s Saturday night and you get hit with the munchies, there’s no need to pull out a vegan cookbook. I learned this in the most wonderful way last Saturday night when the munchies struck and my sweetheart offered to make us “a sandwich”. Little did I know that 20 minutes later, I’d be scarfing down the most delicious, hot panini I’d ever tasted, made essentially out of whatever he could find in the kitchen.
Essential elements you need to consider include:
- Garlic spread: we like to mince fresh garlic cloves and sauté in a little olive oil before adding to Earth Balance vegan buttery spread. This garlic spread makes the most wonderful garlic bread, and when used on the outside of the bread before pressing in the panini machine, creates just the right flavor to go along with the crunchy texture of the finished sandwich.
- Avocado: you simply can’t skip out on slices of avocado when it comes to the Ultimate vegan panini!
- Sofrito: this staple of Puerto Rican cooking has become my favorite seasoning for so many recipes. A “schmear” on your sandwich goes a long way in adding depth of flavor.
- Load up on your favorite veggies: from grilled onions, tomatoes, jalapeños, and pickles to roasted red and green peppers your panini can and should literally be made up of your favorite ingredients. A couple of thin slices of your favorite vegan cheese is optional!
